Delicious pasta: make a silky sauce without complicating dinner
Pasta is inviting when sauce clings to its curves and colours and textures complement each other. You do not need a long ingredient list. These cooking tips help refresh everyday meals without revealing a full guide recipe or prescribing a fixed serving.

Choose a direction first
Pick one base: tomato and herbs, blended vegetables or a creamy finish. Add one contrast, such as browned vegetable pieces or lemon. Start with spices you already own rather than buying a jar for a single meal.
Save some cooking water
Before draining pasta, reserve a small cup of its cooking water. Stir it into the sauce a little at a time to loosen a thick sauce and help it coat the pasta. Stop when the consistency works; you do not have to use the whole cup. If too thin, stir briefly over low heat while watching the pasta. Taste before adding salt, especially if the water was salted.
Use vegetables for flavour and contrast
Cooked courgettes, partly blended, offer a mild base; tomatoes give a different flavour, and cooked peppers add vivid colour. Keep some pieces for texture. Drain excess liquid before blending, then adjust with reserved water. Results depend on the vegetable, cooking method and quantities.
Combine and adjust
Toss drained pasta with sauce in a pan large enough to mix gently. Add liquid in small amounts until coated. When finishing with plain yoghurt or fromage blanc, remove the pan from the heat before stirring it in and avoid a strong boil afterwards, as these products can split. Runny yoghurt behaves differently from thick fromage blanc: test a small amount and adjust.
Make the finishing touches count
Finish at the table with herbs you already have, a little zest from a washed lemon or seeds suitable for those eating. Tomato and basil, courgette and lemon, or pepper and paprika give different flavours without a completely new shopping list. Choose garnishes that suit everyone’s allergies and preferences.
Texture does not tell you the macros
A silky texture cannot tell you a meal’s nutritional composition. The guide’s macros are estimates for its specified ingredients and servings; they do not automatically apply to these assembly ideas.
