Roasted vegetables with golden edges, not a soggy tray

If you expected golden edges and ended up with soft vegetables, look at preparation and spacing before changing recipes. Adjust the method to your vegetables and oven.

Cut with the vegetable in mind

Wash and prepare each vegetable appropriately. Keep pieces of the same vegetable similar in size for more even cooking. A carrot and a courgette will not necessarily cook at the same speed even when cut alike. Start with one or two types so you can spot which needs longer.

Remove surface water

Drain and dry washed vegetables before seasoning. Plenty of surface water and a crowded tray make golden edges harder to achieve. Frozen vegetables may need a different approach: follow package directions instead of automatically treating them like fresh ones. Vegetables also release different amounts of water during cooking.

Give the pieces space

Arrange a single layer with space between pieces. If they pile up, use another tray or cook in batches. When using two oven levels, monitor each tray separately. A little evenly distributed oil coats the surfaces; extra oil will not fix overcrowding. Measure additions if you want to track amounts.

Check the food as well as the timer

Preheat the oven and follow settings from a recipe suited to your chosen vegetables. Check for colouring edges and test the centre with a knife. Turn pieces if needed, remove those ready and keep cooking the rest. Variety, size, quantity and oven differences make a universal cooking time unhelpful.

Add sauce when serving

Assemble just before eating to contrast roasted edges with a creamy sauce. Yogurt sauce, herbs or lemon can change the character of the dish. Taste first because the vegetables are already seasoned. Serve with another preparation, on toast or in a composed bowl. These are culinary suggestions, not a personalised nutrition plan.

Keep a note for next time

Record the vegetable, cut size, oven setting and result. Change one element next time, such as tray quantity. The journal also offers help organising dinner preparation. Explore the Yumlean guide for detailed recipes with portions and estimated macros; changing ingredients, oil or sauce requires adjusting those estimates.
